How the per-slice price works
Almost every wedding baker quotes by the serving and multiplies by your guest count. Wedding servings are narrow, about 1 by 2 inches and 4 inches tall, so a three-tier cake of 6, 8 and 10 inches covers roughly 75 guests. Base prices in many US markets run from about $4 to $12 per slice for buttercream, with fondant, sugar flowers and premium fillings pushing the figure higher and large coastal cities sitting at the top of the range. Delivery and setup are usually separate line items.
Ask whether the quote includes a cake stand, a box for the top tier, and whether your venue charges a cutting fee for slicing a cake it didn't supply.
Booking and the tasting
In-demand wedding bakers fill spring and fall dates six months to a year ahead. Most offer tastings, either as a sit-down appointment or a box of sample flavors to take home, sometimes for a fee that is credited toward the order if you book. Taste the cake, filling and frosting separately and then together; a lemon curd that's lovely on a spoon can bury a delicate almond sponge. Bring your venue details, color palette and a few photos, and talk about the season: a June outdoor reception argues against soft meringue buttercream sitting in the sun.
What holds a tiered cake up
Each tier sits on its own cardboard or plastic board, supported by dowels or wide straws pushed down into the tier below, so the weight passes to the base instead of crushing the sponge. Taller cakes also get a central dowel through every layer. That's why most tiered cakes are transported cold and stacked at the venue, or stacked in a refrigerated van by someone who does it every weekend. If your design includes fresh flowers, the baker should know which ones are food-safe and wrap or pick the stems so they never touch the cake directly.
Ways to feed more guests for less
- Kitchen sheet cakes in matching flavors, kept out of sight and sliced alongside the display cake.
- A smaller display cake paired with cupcakes or a dessert table.
- Faux tiers of decorated foam for height without extra servings, though bakers still charge for the decorating.
- Buttercream instead of fondant, which usually means less labor and a lower quote.
Plenty of couples save the top tier for their first anniversary. Chill it until firm, wrap it tightly in plastic and foil and freeze it; it will be edible a year later, though rarely as good as it was on the day. Many bakers will simply bake you a fresh small tier for the anniversary instead.
