Sizing math: quarter, half and full
Sheet cake sizes are not fully standardized, which is why two bakeries can quote different servings for the same name. Ask for the pan dimensions. These are common ranges:
- Quarter sheet (about 9 by 13 inches): roughly 20 to 30 party slices.
- Half sheet (about 12 by 16 or 13 by 18 inches): roughly 40 to 60 slices.
- Full sheet (about 16 by 24 or 18 by 26 inches): roughly 80 to 120 slices.
The serving counts assume 2 by 2 inch party squares, a modest piece for a crowd with other food around. If the cake is the main dessert, or guests will want generous cuts, plan on 2 by 3 inch pieces and drop the counts by about a third. Double-layer sheets, with filling between two cakes, give taller slices; single-layer sheets are lighter and cheaper.
What a sheet cake should cost
Supermarket bakeries are the budget end, with quarter sheets often around $25 to $45 and half sheets around $45 to $80. Independent bakeries usually charge more, reflecting scratch recipes and real butter: think about $50 to $90 for a quarter sheet, $90 to $160 for a half, and $160 to $300 or more for a full sheet. Fillings, fresh fruit, photo prints and detailed piping add cost. Ask whether the price is for a single or double layer, since that alone can explain a big gap between quotes.
Choosing cake, filling and frosting
For large mixed groups, a marble cake or half-and-half sheet (vanilla on one side, chocolate on the other) keeps nearly everyone happy. Popular fillings include strawberry, Bavarian cream, chocolate mousse and fresh fruit with whipped cream.
Frosting choice matters for logistics. American buttercream holds up at room temperature and takes piping and edible prints well. Whipped cream and whipped icing, light and less sweet, are very popular at Latin and Asian bakeries, but they must stay refrigerated. Cream cheese frosting also needs cold storage. For an outdoor graduation in June, a buttercream sheet is the safer bet.
Transport, cutting and leftovers
Full sheets are heavy and wide. Measure your back seat or cargo area before pickup, carry the board with two people, and keep it flat; a sheet box should never ride on a lap. Cut with a long knife wiped clean between cuts, scoring a grid first so pieces come out even. Leftover buttercream cake keeps a couple of days at cool room temperature, covered, while whipped-cream and fruit-filled sheets belong in the fridge and are best within two days.
