Pastelería, repostería, panadería: what each name tells you
The words overlap, but they hint at a shop's focus. A pastelería is built around cakes, or pasteles. Repostería is the broader craft of sweets, covering cookies, flan, alfajores, gelatinas and small desserts as well as cakes. A panadería leans toward bread and pan dulce. In the US, many shops carry all three, but a place that calls itself a pastelería usually has a deeper cake menu and a design book you can flip through at the counter.
The cake styles you will find
- Tres leches: sponge soaked in evaporated milk, condensed milk and cream, often topped with fruit.
- Pastel de chocolate with whipped cream or ganache, sometimes layered with strawberries.
- Mil hojas: stacked puff pastry with arequipe or dulce de leche, popular in Colombian and Peruvian shops.
- Bizcocho dominicano: a buttery, dense sponge filled with pineapple or guava and frosted with meringue, a Dominican party staple.
- Torta de piña and fruit cakes filled with peaches, strawberries or mango.
Frosting is usually whipped cream (crema batida or chantilly) rather than heavy American buttercream, so cakes taste lighter and need refrigeration.
Ordering for a quinceañera, baptism or wedding
Large celebration cakes are where pastelerías shine. Expect to talk through servings, tiers, fillings and decorations, and to leave a deposit. For a quinceañera or wedding, booking two to four weeks out is common, and more during spring and holiday weekends. Smaller sheet cakes for a birthday can often be done in 24 to 72 hours.
Bring a photo of what you want, a headcount, and your color scheme. Ask whether the shop does fondant, because many Latin bakeries prefer whipped cream and fresh flowers, while others offer both.
Pricing and pickup
Sheet cakes priced by size are generally the best value for a crowd. Tiered and sculpted cakes are priced by serving and design time. Whipped-cream cakes travel poorly in a hot car, so bring a flat surface, run the AC, and get the cake into the fridge soon after you get home.
Most shops ask for a deposit of around half the total when you book, with the balance due at pickup. If the party is large, ask whether a decorated display cake plus a plain kitchen sheet cake in the same flavor would cover your headcount for less. Delivery is sometimes available for wedding and quinceañera cakes, usually for a fee based on distance, and it is worth paying for when the cake has three or more tiers.
