Hong Kong style: the cha chaan teng pantry
Hong Kong bakeries grew up alongside the city's cha chaan teng, the casual cafés that serve milk tea and toast. The bakery case reflects that: rich, sweet breads built on butter, eggs and evaporated milk. The signature is the pineapple bun (bo lo bao), which contains no pineapple at all. The name comes from its crackled, sugary top crust, which looks like a pineapple's skin. Split one and add a thick slab of cold butter and you have a bo lo yau.
Look also for the cocktail bun (gai mei bao) filled with sweet coconut-butter paste, baked char siu bao with a glossy egg wash, and the flaky or shortcrust egg tart, whose custard should wobble slightly and taste of egg rather than sugar.
Taiwanese bakeries: soft, savory and inventive
Taiwanese bakeries share many items with Hong Kong shops but lean toward softer, milkier dough and more savory combinations. Pork floss buns, piled with fluffy dried pork and mayonnaise, are a hallmark. So are scallion buns, hot dog rolls, taro buns and loaves swirled with red bean or matcha. Taiwanese pineapple cakes (fengli su) are a different thing from the Hong Kong bun: a buttery shortbread square filled with real pineapple jam, often mixed with winter melon, and a classic gift box item. Sun cakes from Taichung, flaky rounds filled with maltose, are another one to try.
Cakes, seasonal boxes and celebrations
The refrigerated case holds chiffon cakes frosted with lightly sweetened whipped cream and topped with fresh fruit like kiwi, mango and strawberries, a style many families prefer to American buttercream. Swiss rolls, paper-wrapped sponge cakes and mango mousse are common too.
- Lunar New Year: nian gao (sticky rice cake), turnip cake, and gift boxes of cookies.
- Mid-Autumn Festival: mooncakes filled with lotus seed paste, red bean or five-nut mixtures, many with salted duck egg yolks. Bakeries start selling them several weeks before the festival.
- Weddings: traditional Cantonese families still order boxes of wife cakes and other bridal pastries to give to relatives.
Timing a visit
Buns are typically baked in the early morning and again around midday. Arrive shortly after opening for the full selection, or ask staff when the next tray of egg tarts is due, since that is the one item worth waiting for. Most single buns run roughly $1.50 to $4, and many shops have a self-serve tray-and-tongs setup with a cash discount or card minimum.
